Steviol glycosides:
Stevia glycoside is a food additive extracted and refined from stevia leaves. It dissolves in water, ethanol, and methanol but not in benzene, ether, or chloroform. Steviol glycosides has a sweet taste, with a slight bitterness at high concentrations. It decomposes under alkaline conditions and is hygroscopic. Under typical food processing conditions, it exhibits good heat, alkali, and salt stability. Long-term heating (100°C) at pH values greater than 9 or less than 3 can cause decomposition and reduce sweetness. Steviol glycosides is approximately 200 to 300 times sweeter than sucrose and serves as a natural sweetener.
