Ammonium glycyrrhizate is a food additive derived from licorice (Glycyrrhiza uralensis Fisch., Glycyrrhiza inflata Bat., and Glycyrrhiza glabra L.) through processes such as water extraction, acid precipitation with sulfuric acid (or hydrochloric acid), ethanol extraction, ammoniation, and crystallization. It is soluble in ammonia water and insoluble in glacial acetic acid.
