Cochineal red, also known as carmine, is a food additive derived from cochineal gum, obtained through hydrochloric acid processing. Cochineal red (also known as carmine) is a mixture of natural organic acids. It has a solubility of 0.0335 g in water at 20°C and a solubility of 0.916 g in 95% ethanol. It is readily soluble in solutions of sodium bicarbonate, sodium carbonate, and sodium hydroxide. In solutions with a pH higher than 6, it forms insoluble color precipitates with metal ions other than alkali metals. The color of its solution changes with pH: it is orange-yellow at pH less than 4, orange-red at pH 4.0-5.0, and purple-red at pH higher than 6.

Application:
Cochineal red is a natural food coloring agent with natural ingredients, safety, and good stability. It is widely used in various food industries. Specific industry categories and usage levels can be referenced from the relevant provisions in the "GB2760-2014 National Food Safety Standard for the Use of Food Additives." For example, the maximum usage level in products such as jams, cocoa products, chocolates and chocolate products (including cocoa butter substitutes), as well as candies, confections, candy and chocolate-coated products, composite seasonings, fruit and vegetable juice (paste) beverages, carbonated beverages, flavored beverages (limited to fruit-flavored beverages), and formulated wine products is 0.5g/kg. For solid beverages, the usage level should be increased based on the dilution factor.
